Taco Trio brings street-vendor and market-style Mexican food to South Portland's Knightville neighborhood, working from recipes passed down through the founder's mother and the families of several team members. Everything is made from scratch daily, with a help-yourself salsa station anchoring the small counter-service dining room and outdoor seating added in warmer months.
The bar runs on agave, stocking traditional sotol and raicilla alongside tequilas and mezcals. Regulars point to the salsa bar and the freshness of the ingredients as reasons they keep coming back.
The restaurant also operates with sustainability in mind, using compostable utensils and packaging and composting or recycling the large majority of its waste.
