Jade Rabbit is a family-friendly, queer-run, worker-owned restaurant in Portland's Buckman neighborhood, built around handmade vegan dim sum, pan-Asian fare, and tea service. The dim sum is made to order and includes dishes typically hard to veganize: chile oil wontons, char siu bao, and rabbit-shaped bawan dumplings, a nod to the restaurant's namesake.
Chef Cyrus Ichiza designed the restaurant's vegan meats, which are produced in Taiwan from non-GMO heirloom soy fermented for a minimum of three years. Cyrus previously led Ichiza Kitchen and has also worked in pop-ups and chef features spanning Italian and Korean cooking as well as his own Tsinoy (Filipino Chinese) and Chamorro heritage.
The restaurant's name comes from Chinese lore, in which the Jade Rabbit lives on the moon with the goddess Chang'e and brings medicine to earth in the form of dumplings. Jade Rabbit was named a Portland Monthly best-of pick in 2025.
