Vedge treats vegetables like they need no apology and no substitute meat to hide behind. Perfectly charred carrots headline as a main course, not a side apologizing for the absence of protein. Shallots turn up diced into a garlicky soup with real bite. Even the bar plays the game, blending celery into a bourbon cocktail instead of reaching for something more predictable. The kitchen's whole argument is that vegetables have more range than most restaurants bother to explore, and it keeps proving that point dish after dish.

The room backs up the food instead of overselling it: wood floors, a fireplace, stained-glass windows that give the space some warmth without turning precious. Entrees stay reasonable, which matters when the cooking could easily justify charging more than it does.

The trophy case here is long — five straight years of Best Chef finalist nods, a pastry semifinalist nomination, and a spot in Philadelphia's Michelin selections. That's not a fluke streak. It's a decade-plus of a kitchen that decided vegetables deserved main-course ambition and never let up on the argument.

The Spot
Vedge is a vegetable restaurant, full stop — no meat, no dairy, no substitutes standing in for either. Chefs Rich Landau and Kate Jacoby opened it in 2011 inside Philadelphia's historic Tiger Building, building a modern fine dining format around seasonal produce and bold global flavors rather than health-food conventions. The restaurant sources organic produce from the chefs' own farm, Lost Glove, in Chester County.

The stuffed avocado and braciole have become known dishes among reviewers, part of a menu that draws committed vegans and omnivores alike. The bar runs a natural wine program alongside craft beer and a seasonal cocktail list.

Landau and Jacoby have been recognized by the James Beard Foundation as Best Chef finalists across multiple years from 2015 through 2020, following an earlier semifinalist nod in 2014, with additional semifinalist recognition for Outstanding Pastry Chef in 2014, 2015, and 2016. Michelin selected Vedge for its Philadelphia guide in 2025.
