The Spot
Carolyn's serves modern Vietnamese food designed to share, with a kitchen that leans into Louisiana and French influences alongside its Vietnamese base. Dishes split between small and large plates: Mushroom & Leek Dumplings and Dry-Aged Beef in Betel Leaves lead the smaller side, while Corn & Crab Congee, Hoi An Chicken, Lemongrass Smoked Beef Short Rib, and a Salt & Pepper Cornmeal-Crusted Whole Fish anchor the larger ones. A bánh canh seafood boil noodle dish and chicken liver mousse with Asian pears and sesame crackers round out the fusion approach.

House touches run throughout — pickles and ice creams made in-house, heirloom tomatoes worked into salads, dry-aged beef used across multiple dishes. The restaurant also runs a full bar.
