Our Take

Dolfy's is Basque cooking in a city that rarely strays from its own canon, and it makes the case for the detour fast. The leeks are the proof: rolled tight like a charred cigar, blistered on the outside, impossibly sweet and earthy inside, set over a pool of romesco with real spine to it. The chicken and jamon croquettes do the same trick in a different register — a shatteringly crisp shell giving way to filling that stays soft and rich all the way through. Neither dish reads as a stunt. Both taste like someone who actually understands Basque food cooking it straight, in a neighborhood that doesn't usually get the chance to eat it.

The room backs up the plates. Service moves with the same confidence as the kitchen, the atmosphere feels lived-in rather than staged, and the prices don't punish you for eating this well. Nothing here is coasting on novelty.

A 2026 list recognized Dolfy's among the city's notable new openings, which only confirms what the food already argues. Freret didn't need another good restaurant. It got one anyway.

The Spot
Dolfy's brings Basque Country cooking to Freret Street, built around a wood-fired oven and a menu that leans into pintxos and larger shareable plates rather than the paella-centric version of Spanish food. Chef Adolfo Garcia Jr. opened the restaurant with his partner, Sophia Petrou Garcia, with a focus on local, seasonal ingredients run through the fire.

The pintxos list includes Gildas and Ibérico pork skewers with gordal olives and mojo verde, while larger plates run from charred leeks over romesco and grilled octopus with yukon gold potatoes and pimentón picante to a wood-fire half chicken with white bean chorizo stew and dry-aged yellowfin tuna in saffron beurre blanc. The Basque cheesecake closes things out and has developed a following of its own.

Service has been described as passionate and attentive, and the room has settled in as a notable new addition to Freret Street's restaurant stretch. The New York Times included Dolfy's on its Restaurant List in 2026.
