Paella's Mediterranean Fusion serves a la carte tapas and entrees in East Naples, built around Spanish cooking with a paella program at its center. The list includes a Black Paella made with squid ink, Spanish rice, and seafood, a Meat Paella of pork, chicken, chorizo, beef, and saffron rice, and a House Mix paella with seafood and chorizo alongside the saffron rice base.
Tapas run from boquerones (white anchovies in olive oil with garlic toast) and grilled octopus with fingerling potatoes and romesco to Iberian bellota ham with pan con tomate and seared foie gras with walnut toast and berry port reduction. Entrees extend beyond the paellas with seared Scottish salmon over quinoa, spinach, and mushroom, and a shrimp truffle fettuccine with cherry tomatoes, kale, and truffle cream, while a tomato and fresh burrata salad rounds out the menu.
The restaurant is owned by Juan Perez, who has worked as a sous chef since 2009 and served as head chef at Lamoraga.
