Ishtia is organized entirely around fire. The kitchen roasts, bakes, and smokes its way through each dish, and the chefs who cook the food are the same ones who bring it to the table, course by course, narrating as they go. It's chef David Skinner's take on Native American cuisine, built less as a standard tasting menu and more as a guided culinary experience.
The room holds 18 seats split across two formats: a Chef's Table running a 9-course menu and a Main Dining Room running an 18-course version. Either way, the meal unfolds slowly over several hours, with the pace treated as part of the experience rather than an inconvenience.
Ishtia has landed on the Eater 38 and was named to Houstonia Magazine's citywide best list for 2025.
