Da Gama canteen comes from RISHI Hospitality, the husband-and-wife team who previously ran The Queen Vic pub & kitchen from 2009 to 2018 and also own OPORTO Fooding House & Wine in Midtown. This concept shifts the focus east and west at once, drawing on the former Portuguese-Indian territory of Goa, along with Gujarat and Portugal, filtered through a Houston lens.

The setting is a casual canteen, with organic and natural wines and cocktails served alongside the Portuguese-Indian menu. Regulars point to the lunch specials as a particular value, and the bar program gets frequent mention alongside the food.
