Baso brings Basque-inspired live fire cooking to Houston's Northside, built by Jacques Varon — who returned to his hometown after cooking in Austin, Los Angeles, and Tokyo — alongside Max Lappe, who joined him from Los Angeles. The kitchen sources many of its ingredients from Texas, working with purveyors like The Farm Patch, Plant It Forward, Capra Farm, and Gunderman Farms on a menu that changes often.
Counter seating puts guests close to the open fire kitchen, and larger parties can opt into the 'Trust the Chef' set menu.
Baso has been Michelin Selected in both 2024 and 2025, and its chef was named a semifinalist for the James Beard Foundation's Emerging Chef award in 2026. It also landed on Eater's Eater 38 list.
