Bar Colette pairs a serious cocktail program with a sushi menu from Kazuhito "Kaz" Mabuchi, executive chef-partner of Namo, the sister restaurant next door. Bar director Rubén Rolón builds his drinks around travel and nostalgia, aiming for cocktails that nod to a specific memory, dish, or feeling, backed by a spirits list running past 100 bottles from around the world.
The food side leans on the same sourcing as Namo: fish brought in directly from Japan, worked into a contemporary sushi menu built to complement the cocktail list rather than compete with it. The room itself is intimate, set inside the same McKinney Avenue building as Namo.
The bar was named both a Finalist and Semifinalist for Best New Bar at the 2025 James Beard Awards.
