Fork & Spoon operates as Montana's first pay-what-you-can restaurant, built around scratch-made, homegrown cooking using local ingredients whenever possible. Diners are greeted, order a meal, and are asked whether they'd like to contribute — any amount works, and the kitchen sets the menu while guests set the price.

The restaurant runs as a social enterprise: nightly income from paying customers offsets meals for those who can't contribute, while a Catering & Space Rental arm and The Mighty Spork food truck generate additional revenue that gets reinvested into dinner service. Fork & Spoon also employs people facing barriers to work, including those recovering from addiction, homelessness, or incarceration, building restaurant skills as part of the mission.

Beyond dinner service, a take & bake freezer offers pre-portioned items like chocolate chip cookie dough for pickup, and the restaurant takes on catering work alongside its regular seating. Community partners and volunteers help keep the operation running.
