Matsunori opened in Fenway in February 2023 as a counter built entirely around temaki-style sushi. Rolls are made one at a time and handed across the bar rather than plated ahead, with nori meant to stay crisp from fold to first bite. The kitchen runs a fish-forward ratio in every roll — more seafood than rice — and makes its own soy sauce in-house, with added sweetness to round out the umami.
The menu moves through a handful of standouts: a torched, caramelized miso-cod handroll tucked over a thin layer of rice, a spicy tuna version with crunch from fried sweet potato, and a spicy scallop roll built on Hokkaido scallops with spicy mayo, tobiko, and masago. Uni and caviar handrolls round out the raw end of the counter, while the A5 wagyu handroll uses Miyazaki beef from Toriyama Farms, sourced through co-owner Kevin Liu's own connection to the farm.
