Our Take

Jahunger built its name in Providence before bringing the same playbook to Cambridge, and the playbook is simple: hand-pulled noodles chewy enough to fight back, laced with chili and fermented funk until the bowl tastes like a dare. The namesake noodles are the reason people show up, but the kitchen doesn't coast on one dish. Cumin-and-pepper lamb skewers, charred and tiny, work as a palate reset between bites of something bigger. The cold chicken appetizer, lacquered in a chili sauce the kitchen won't explain, arrives under black fungus and scallions and tastes like a dish built by people who trust their own seasoning.

The smart move is knowing when to pull back. Blistered green beans cut the heat without going bland. A scallion pancake or a plate of leek and egg dumplings gives the meal somewhere quiet to land before the next round of spice. That range — fire balanced against restraint — is what separates a one-note chili restaurant from one that actually knows what it's doing.

A Michelin Bib Gourmand confirms what the room already proves on a busy night: this is a kitchen operating at full command of a cuisine most of the city doesn't know well. It earned the attention. Go hungry, and order past the noodles.

The Spot
Jahunger serves Uyghur food in Cambridge, having started in Providence before setting up here with a neighborhood, a la carte menu built around fiery, umami-heavy flavors and chewy, chili-laced noodles.

The laghman noodle dish, tossed with stir-fried pork and vegetables, has developed a devoted following, alongside cumin-and-pepper-marinated lamb skewers (kavap) and a cold chicken appetizer lacquered in chili sauce and topped with onions, black fungus, and scallions. Blistered green beans serve as a charred, cooling counterpoint to the heavier dishes, and a scallion pancake or leek-and-egg dumplings offer a milder option alongside hand-made lamb dumplings, samsa, polo, chicken stew, and spicy beef tripe. Home-made yogurt and a honey cake round out dessert.

Michelin awarded Jahunger a Bib Gourmand in 2025.
