Johin'na takes its name from the Japanese word for "refined" or "elegant," and the menu is built by Executive Chef Ashley Jackson alongside her sister, Jr. Sous Chef Amber Diamond. Both are Alabama natives whose cooking has been shaped by time in Bali, London, and Los Angeles, and that range shows up across a menu that leans on Japanese technique while staying rooted in the South.
The kitchen centers on robata-yaki, slow-grilling dishes over open flame, alongside sashimi and sushi cut from fish flown in fresh. Oysters and sake round out the raw and cold side of the menu. Guests can eat à la carte at the bar or move through a chef-led omakase, and a Pisces symbol — two fish circling one another — appears throughout the space as a nod to the sisters' shared bond.
Set in downtown Birmingham, Johin'na pairs that composed, detail-driven menu with an intimate room built for both quick bar seats and a slower, guided meal.
