Adiõs is a cocktail bar in Central City built around classic drinks reworked with Mexican-made-and-grown spirits and ingredients. The room leans into the concept: tropical plants, antique stained glass from a Mexican chapel, prints from Oaxacan artist @arch.oax, and a Dia de los Muertos ofrenda that stays up year-round.
Co-founders José Medina Camacho, who serves as Beverage Director, and Jesús Méndez, Managing Partner, were both born in Mexico and immigrated to northern Alabama with their families in the early 90s, building the bar's program around their heritage and years in food and beverage.
That program earned national attention in 2025, advancing to both semifinalist and finalist for the James Beard Foundation's Outstanding Professional in Beverage Service award.
