La Plancha is chef Mariha Hinojosa's fast-casual restaurant bringing the flavors of Nuevo León and South Texas to Central East Austin. Culinary Institute of America-trained and raised in the Rio Grande Valley, Hinojosa builds the menu around family recipes translated into tortas, tacos, and other borderland street food, made with fresh, local ingredients.
The torta lineup includes the Pambazo, La Tejana, and the Chilaquiles Torta, alongside tacos like Brisket Barbacoa and Pork Al Pastor. Sides run through churritos, queso and chips, guacamole, and street corn, with a rotating cast of drinks and dishes based on what's fresh that day.
The space is small and informal, tucked into a corner storefront with limited seating — the kind of spot regulars build their week around.
