Knuckle Sandwich started small — a trailer cranking out sandwiches at The Yard — before growing into a proper kitchen operation now based at Ant's Beer Cave on E St Elmo Road in South Austin. The move gave the business room to expand: a longer menu built out from the original lineup, cooked with more consistency than a trailer setup allowed.

The sandwiches take their cues from East Coast delis and bodegas — hearty, unfussy, meant to be eaten without ceremony. The namesake sandwich riffs on a classic Italian sub, and the cheesy mushroom reuben has become one of the menu's known quantities alongside it.

The space itself doubles as a bar and event venue, with a rustic, low-key feel that leans into its bar-and-music-room roots rather than away from them. Knuckle Sandwich has developed a following in Austin for turning out sandwiches that feel like a genuine East Coast import rather than a local approximation.
