Red Ginger opened in early 2016 near Pritchard Park in Asheville's South Slope Brewing District. Chef Liu and Chef Jiang run the kitchen, serving Chinese dim sum alongside a tapas-style menu built around fresh, locally sourced ingredients. Instead of the rolling carts typical of dim sum houses, the dining room is built around an open kitchen, so guests can watch the folding, steaming, and wok work as it happens.

The menu spans steamed and pan-fried dumplings — shu mai, Shanghai-style pork dumplings, crystal shrimp dumplings, Chinese chive dumplings — alongside pot stickers, gua bao, smoked duck breast, yakitori skewers, dan dan noodles, and chow fun. Seafood runs to salt and pepper prawns and curry soft shell crab, with vegetarian and gluten-free items marked throughout the menu.

The restaurant has built a following of regulars who return specifically for the dim sum, even as accounts of any given visit can differ sharply from table to table.
