The Pastry Project runs out of a walk-up window in Pioneer Square, with a seasonal soft serve window opening alongside it from June through August. Founded by Heather and Emily as a women-owned social enterprise, the bakery ties its retail counter to a larger purpose: proceeds from baked goods and pastry kit subscriptions help fund a free baking and pastry training program for individuals facing barriers to employment in the industry.

Regulars keep coming back for the cinnamon rolls and the ham and cheese croissant, part of a rotating case known for consistent quality and variety, served with friendly service at the window. The pastry kits extend the operation beyond the shop, shipping pre-measured, chef-curated recipes to home bakers, with proceeds cycling back into the training program.

Beyond the window, The Pastry Project also runs baking classes, making it as much a teaching kitchen as a retail counter.
