Pufftown Bakehouse is built around one thing: croissants, done with respect for tradition and a willingness to mess with it. The bakehouse's stated approach is to innovate on the classic pastry rather than just replicate it, resulting in a rotating lineup of seasonal, sometimes unconventional flavors alongside the straightforward, flaky version done well.

It's owned and run by a couple whose personal touch has become part of the draw for regulars. The Downtown Seattle location near Pike Place makes it an easy stop for market-goers, though the croissants have developed enough of a following that arriving early is generally necessary to catch them before they're gone.
