Moonshot Coffee traces back to 2012, when friends opened a pop-up called Caffe Delia in White Center before turning it into a shop. In 2014 they handed it off to the current owners, who reimagined it as Moonshot Coffee — a name and theme drawn from JFK's Rice University speech launching the space race, a nod to White Center's history with the aeronautics industry.

The shop serves coffee, matcha, and a rotation of house-made and guest pastries alongside small bites. For takeaway, it stocks coffee beans, a limited run of beer, and natural wine.

Regulars describe it as an unpretentious neighborhood spot with friendly baristas, and it's built a reputation as a cozy gem in the Highline area.
