Menya Muso brought a Tokyo ramen and tsukemen brand to the United States for the first time when it opened in Capitol Hill in November 2018. The restaurant, run by Passion Foods, Inc., has since expanded to several other Seattle-area locations.
The menu centers on tonkotsu ramen — a rich, creamy pork-based broth served with fresh vegetables and pork belly — alongside tsukemen, the house's dipping-style noodles paired with a thick pork-and-fish broth designed for the noodles to soak up.
