Oat Bakery opened its doors in 2017 with a specific rejection built into its menu: no baguettes, no brioche, no croissants. Instead it bakes dense, hearty breads loaded with whole grains, seeds, and nuts, alongside gluten-free and flour-free options, all built around the idea that healthier baking shouldn't mean flavorless baking. The Downtown shop on Haley Street was the original location before the bakery expanded to Goleta and Montecito.

The team describes itself as self-taught rather than classically trained, learning the craft by doing rather than through pastry school pedigree. Bread comes out of the oven starting at 6am so loaves are still warm when the doors open. The breakfast and lunch menu stays small and seasonal, built on french butter, farmstead cheeses, housemade ricotta, and local jams, with a rotating farmers market bun that shifts with whatever herbs and produce are in season — the sage garlic bun has become something of a signature.
