bouchon opened in downtown Santa Barbara in 1998, founded by Mitchell Sjerven, a UCSB graduate who also teaches at Santa Barbara City College's School of Culinary Arts. He runs the restaurant alongside proprietor Amy Sachs, who managed the Santa Barbara restaurants Piatti and Acacia before bouchon opened.
The kitchen works from what it calls an "as-fresh-and-as-local-as-possible" approach, drawing fish from the Santa Barbara Channel and produce from the surrounding countryside, with the wine list built to run alongside the region's bottles.
The space spans an interior dining room, a brick-walled patio, and a terrace on West Victoria Street, along with the Cork Room, a private space built around a communal Grand Table for group dining.
Regulars describe it as a special-occasion destination with long-standing service relationships and hands-on ownership. The Santa Barbara Independent named bouchon its Best French Restaurant in 2025.
