The Spot
Phở Gà Go operates as a food truck with a dine-in option at Crab Hut Mira Mesa, built around a single focus: chicken phở. The broth is simmered for 12 hours with chicken bones, with no substitutions or shortcuts, and the noodles are fresh and thick. The chicken phở is made to the same quality as the kitchen behind Kingfisher, according to the restaurant.

The menu stays narrow and specific: phở gà đùi (leg and thigh) and phở gà ức và cánh (breast and wing), chả giò egg rolls filled with pork, shrimp, taro, wood ear mushroom, carrot, and mung bean, a chicken salad (gỏi gà xé phai) built on banana blossom and pickled lotus stem, and cà phê phin sữa đá for Vietnamese iced coffee.

Sourcing gets called out by name: garlic from Christopher Ranch, and Red Boat fish sauce — just anchovies and sea salt, barrel-aged 12 months in Vietnam — for the nước chấm. The egg rolls use rice paper rather than egg-noodle wrappers, a method carried over from the owners' hometown in Vietnam.

San Diego Magazine named Phở Gà Go to its 2026 city-best list.
