The Knotted Apron sits in the Rosemont section of Deering Center, offering French-inspired dishes and specialty cocktails out of a scratch kitchen built around seasonal ingredients. The room aims for casual dining with an upscale feel, the kind of place meant to function as a neighborhood bistro.
Chef Ryan Hickman opened the restaurant in 2020 alongside his wife and co-owner, Kate Hickman. His path there ran through New England line cook jobs, a stint as sous chef at Back Bay Grill in Portland under Chef Larry Matthews Jr., time exploring farm-to-table cooking in California and Lake Tahoe, a return east to Arrow's in Ogunquit under Chefs Mark Gair and Clark Fraiser, and several years helming the kitchen at Pine Point Grill in Scarborough from 2014 to 2019. The Knotted Apron marked his first turn as chef-owner.
Kate Hickman handles operations and management, drawing on a restaurant career that began as a teenager and later included roles with Prentice Hospitality at Evo Old Port and the Chebeague Island Inn before she and Ryan opened their own place together.
