Our Take

Công Tử Bột builds itself around the quán nhậu, Vietnam's answer to the gastropub, and it commits to that idea completely. This is small-plates drinking food, built to be shared over natural wine or a local beer, not fussed-over tasting-menu cooking. Bánh bèo, the steamed rice cakes topped with shrimp and egg floss, sit alongside chicharrón and fish sauce, and the format works because every dish is engineered to disappear fast between rounds of drinks.

The Mom Style plate is the clearest argument for what the kitchen actually does well: Maine red hot dogs and pineapple piled onto garlic fried rice that would carry the dish on its own. It's a Vietnamese-American joke that still tastes serious, and that's the register the whole menu operates in — playful concept, real technique underneath.

The room backs it up. Colorful, loosely lit, R&B running under the noise of a bar that's actually being used as one. It reads like a place built for a good night rather than a special occasion, and it delivers on that promise consistently enough to have earned four straight years of James Beard recognition for the chef. That's not luck. That's a kitchen that knows exactly what it's doing.

The Spot
Công Tử Bột takes its name from its signature phở, serving Vietnamese food from a Washington Ave address in Portland's East End. The cooking leans creative rather than strictly traditional, set inside a modern, design-forward room that stands out on the Hill.

The restaurant has drawn sustained national attention: the James Beard Foundation named it a Best Chef semifinalist in 2018 and 2019, then a finalist in 2020 and 2022. Portland Press Herald included it among the city's best in its 2025 city magazine rankings.

Regulars point to standout flavor and a dining room people keep coming back to, though some note portions can run small for the price and service pacing isn't always even. The team has since opened Oun Lido's, a Cambodian restaurant.
