Shani, born in Jerusalem in 1959, traces his approach to food back to his grandfather, an agronomist and vegan who took him through local markets, fields, and vineyards as a child — an influence that still shows in the kitchen's reliance on fresh, local ingredients sourced from known farmers and purveyors.
