Malka opened in 2018 in Tel Aviv's business district as Eyal Shani's first kosher restaurant, translating dishes he'd cooked for years into a format more people could eat. Shani, born in Jerusalem in 1959, traces his approach to food back to his grandfather, an agronomist and vegan who took him through local markets, fields, and vineyards as a child — an influence that still shows in the kitchen's reliance on fresh, local ingredients sourced from known farmers and purveyors.
The West Palm Beach location, in Providencia Park, is one of several Malka outposts alongside New York, Los Angeles, and the original Tel Aviv restaurant.
