Quills Coffee roasts all its coffee in-house in Louisville, working in small 45-pound batches by hand. The team sources and samples more than 100 coffees a year, selecting around 20 from the premium specialty-grade tier. Head roaster Justin leads a team of four roasters, and the operation founder Nathan started has grown to six cafes in Louisville plus one in Indianapolis.
The house signature is Blacksmith, an espresso blend carrying notes of baker's chocolate, blueberry, and hazelnut, used across the lattes, cappuccinos, and cortados on the menu. Beyond the cafe counter, Quills also runs a coffee subscription and direct retail sales. Local media has named it among the city's best coffee spots.
