Slap's BBQ opened in June 2014 with just a few hundred pounds of meat, sold out within hours, and scaled up to its current daily output within a couple of months. The operation still runs on that same logic: barbecue smoked and served fresh each day, with production capped rather than held over.
Ribs are the standout on the menu. Daily specials rotate through the week, including burnt end street tacos on Tuesdays and smoked chicken wings tossed in house sauces on Wednesdays. The space itself is small and cramped, which shapes the experience as much as anything on the plate.
Slap's is also one of the few barbecue restaurants in Kansas City actively competing on the KCBS contest circuit, entering an average of 25 to 35 competitions each season.
