Cucho's Taco Grille is a father-son operation, run by Erik Guzman Sr. and Erik Guzman Jr. across two South Carolina locations — Mauldin and Pleasantburg Drive in Greenville. Guzman Sr. brings more than 30 years in the restaurant industry, including 16 years owning and managing his own place, along with a history of entering and placing in cooking competitions.
Trips through Mexico in 2018 and 2019, sampling regional flavors, spices, and cooking styles, fed into the menu here, which sets traditional Mexican recipes alongside contemporary and fusion dishes. Erik Jr., who grew up around the business and spent years in sales and operations, handles the front-of-house side of things.
