Molotov Kitschen + Cocktails is chef-owner Bo Porytko's return to his Ukrainian American roots, following earlier Denver projects Rebel Restaurant and Misfit SnackBar. Raised in a Ukrainian-speaking household in New Jersey, he built the menu around the flavors and techniques of Eastern European cooking, filtered through the same inventive approach that shaped his previous restaurants.
The space is a 30-seat room on East Colfax with an 8-seat patio, decorated with cuckoo clocks and Matryoshka dolls that mix traditional Eastern European charm with a modern sensibility.
The menu moves through zakusky, mains, and dessert: dishes like crab and corn holubtsi, adjika pelmeni, grilled kishka, and cold creamy borscht lead into confit lamb shank, rabbit Kiev, and pan-seared red perch, alongside a cocktail list that includes the Molotov Strawberry and Vodianyk.
Bo Porytko has been named a James Beard Award semifinalist for Best Chef: Mountain in both 2025 and 2026, and Molotov has landed on Eater's Denver Essential 38 along with 2025 best-of lists from 5280 and Westword.
