Thunderbird Pies started during the pandemic, when the culinary team behind Cane Rosso and Zoli's Pizza began experimenting with a Detroit-style pizza they loved but couldn't easily find in Dallas. It launched as a delivery-only operation out of North Dallas, expanded into Fort Worth, and in 2021 opened its first brick-and-mortar restaurant in East Dallas near White Rock Lake.
The pies follow Detroit-style conventions: Wisconsin brick cheese spread all the way to the edge for a crispy, buttery frico crust, with sauce ladled on top rather than underneath. The dough runs thinner than a Sicilian pie but still turns out a crunchy edge and a light, airy crumb.
The East Dallas space leans into an arcade-and-decor kind of fun, and has built a reputation around good value and attentive service alongside the pizza itself.
