Lang Van works because it refuses to be anything other than exactly itself. The dining room is living-room-sized, nobody dresses up, and the owner greets regulars by shouting hello before she has their order memorized. That's not branding. It's just how the place runs.

The food backs it up. Bánh xèo comes out crisp and full, the stir-fried vermicelli with lemongrass-curried chicken is the kind of dish you start craving on the drive home, and the Vietnamese iced coffee does exactly what it's supposed to do.
