Jon G's Barbecue started with brisket sold at a brewery, a side experiment for North Carolina natives Garren "Jon G" and Kelly Kirkman that grew into a food truck and eventually a full catering operation — catering made up most of the business before they opened their storefront in Peachland, outside their hometown, in June 2020.

The focus is Texas-style smoked meats, and regulars consistently point to the quality and execution of that meat as the draw, with the sides drawing less attention by comparison. Lines are part of the experience here, and showing up early is treated as routine rather than a hassle.

Catering remains part of the operation today, and the family-run feel that built the food truck's following still shapes how the restaurant runs.
