Sweet Charli Girl started with Rachel Metts Salim's own gluten intolerance diagnosis, which sent her into recipe testing to see whether gluten-free baking could hold up against the treats she grew up on. She credits her mother and grandmother for the baking fundamentals, which she then adapted into gluten-free versions of cakes, cookies, and other baked goods. She opened the business in 2018, naming it after her rescue dog, Charli Girl.

The bakery began as a farmers market stand before shifting into a pickup-and-delivery model, and has since grown into a brick-and-mortar shop on Burnet Road in Crestview.
