Dolce Neve started with Francesca's search for proper Italian gelato during her years as a doctoral student in Ohio. She eventually trained at Carpigiani Gelato University in Bologna and worked under Gianfrancesco Cutelli at Gelateria De' Coltelli in Pisa, one of Italy's well-known gelato shops. In 2012 she won the Sherbeth Festival Talent Show and went on to place 6th at the Sherbeth Festival, a competition among the world's top gelato makers.
The shop is a family operation: Leo, Francesca's fiancé, grew up in Northern Italy eating homemade gelato made with seasonal, local ingredients before spending a decade working in Milan. Marco, Francesca's brother, spent time in New York and brings that city's flair for inventive flavor combinations into the shop's rotating creations.
The name Dolce Neve means "sweet snow," a nod to the belief that gelato's origins trace back to snow mixed with honey and fruit juices. The Bouldin Creek shop on South 1st is one of several Dolce Neve locations across Austin and Houston.
